Sorrel soup

Description: Light soup with vegetable or chicken broth, sour sorrel and boiled egg.
Ingredients (4 servings):

  • 200 g fresh sorrel
  • 1 l chicken or vegetable broth
  • 2 potatoes
  • 1 carrot, 1 onion
  • 2 eggs, salt, pepper, herbs
    Preparation:
  1. Throw potato cubes into the broth and bring to a boil.
  2. Fry the onion and carrot, add to the soup.
  3. Add chopped sorrel, cook for 5 minutes.
  4. Add salt and pepper, turn off the heat and let it brew.
  5. Cut the eggs, put them in a plate, pour in the soup and sprinkle with herbs.
