Stuffed Peppers with Quinoa and Smoked Sausage

Why you should try it: An interesting "mix" of quinoa, smoked meats and vegetables - filling and bright, without any extra hassle.

Ingredients (4 peppers):

  • 4 bell peppers
  • 150 g quinoa (section "Cereals")
  • 100 g smoked sausage Berger or Banquet
  • 1 can of red beans
  • 1 small onion, 1 clove of garlic
  • 2 tbsp tomato paste, coriander greens

Preparation:

  1. Cook quinoa according to package instructions.
  2. Fry the onion, garlic and chopped sausage, add the beans, tomato paste and quinoa – heat for 2 minutes.
  3. Fill the peppers with the filling, place in a mold, add 50 ml of water, bake for 20 minutes at 180 °C.

Serve with chopped coriander and yoghurt sauce if desired.
