Stuffed Peppers with Quinoa and Smoked Sausage
Why you should try it: An interesting "mix" of quinoa, smoked meats and vegetables - filling and bright, without any extra hassle.
Ingredients (4 peppers):
- 4 bell peppers
- 150 g quinoa (section "Cereals")
- 100 g smoked sausage Berger or Banquet
- 1 can of red beans
- 1 small onion, 1 clove of garlic
- 2 tbsp tomato paste, coriander greens
Preparation:
- Cook quinoa according to package instructions.
- Fry the onion, garlic and chopped sausage, add the beans, tomato paste and quinoa – heat for 2 minutes.
- Fill the peppers with the filling, place in a mold, add 50 ml of water, bake for 20 minutes at 180 °C.
Serve with chopped coriander and yoghurt sauce if desired.
