Ingredients (for ~20–25 servings):

300 g hard cheese (Gouda, Cheddar or Edam), cut into cubes ~1.5 cm

3 tbsp extra virgin olive oil

1 tsp balsamic vinegar (optional for a slight tartness)

1 clove garlic, very finely chopped or pressed through a garlic press
-
1 tsp fresh rosemary, finely chopped
-
1 tsp fresh thyme, leaves separated from stems
-
a pinch of sea salt and freshly ground black pepper
-
a pinch of red pepper flakes (for those who like it spicy)
Step by step instructions:

Preparing cheese.
Place the cheese cubes in a shallow bowl or container with a lid. -
Marinade.
In a separate bowl, combine olive oil, balsamic vinegar, garlic, rosemary, thyme, salt, pepper and chili flakes. -
Impregnation.
Pour the marinade over the cheese cubes, stir gently to coat each cube with the spices. Close the container with a lid. -
Excerpt.
Refrigerate for at least 2 hours (preferably overnight). This will allow the cheese to absorb the flavors of the herbs and butter, and the taste will become richer. -
Innings.
Remove 15–20 minutes before serving to allow the butter and spices to warm slightly and reveal their bouquet.
Place the cubes on a small board or in individual bowls and garnish with a fresh sprig of thyme.
